Ingredients (Serves 4)

  • For the Biscuits:

    • 1 tbsp baking powder

    • 1/2 cup cold butter, cubed
    • 2/3 cup milk
  • For the Filling:

    • 1 pint fresh strawberries, hulled and sliced
    • 2 tbsp sugar (optional)
    • 1 cup whipped cream or whipped topping

Instructions

Step 1: Prepare the Strawberries

  1. Slice the strawberries and toss them in 2 tablespoons of sugar if they need extra sweetness. Set aside to macerate.

Step 2: Make the Biscuits

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Gradually add the milk and stir until a soft dough forms.
  5. Roll out the dough on a floured surface to about 1/2-inch thickness. Use a heart-shaped cookie cutter to cut out biscuits (or just cut into squares if you don’t have a cutter).
  6. Place biscuits on a baking sheet and bake for 10-12 minutes, until golden brown.

Step 3: Assemble the Shortcakes

  1. Slice the biscuits in half horizontally.
  2. Layer the bottom half of each biscuit with strawberries and a dollop of whipped cream.
  3. Place the top half of the biscuit on top, and add more whipped cream and strawberries for garnish.
